In deepest rural Ireland, on the edge of a lake in Drumshanbo, Co Leitrim, is home of The Shed Distillery and PJ Rigney. It's the pea blossom, which we discovered in one of the Empress tea blends, that imbues the gin with a distinctive earthy note.
